Video at the bottom of the page, but why did the music have to continue during the flying sequences.....

Because producers seem to think music adds to the experience when any right thinking person knows that the only music needed is the sound of the Rolls Royce Merlin.
    Pin back yer lug'oles!

Is it only a certain age group who get a shiver down the spine or similar reactions when they hear that?

When they run the annual 'Thunder Sprint' in Northwich, one of the highlights is a 10 minute display by a Spitfire. I live just where it turns back after a west to east run. Awesome.
Added attraction on the Saturday evening this year, James Toseland and "Crash". http://www.thundersprint.com/

The Duxford displays are usually good for multiple Spitfires. Once they get into their act it's simply awesome with planes coming at you from all directions and the air full of the sound of Merlins - and Griffons sometimes - as they perform their aerial ballet. It's a sound of which I shall never tire.
